Ingredients

  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tbsp freshly squeezed lime juice
  • 12 tbsp chili paste (adjust to heat preference)
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup snap peas
  • 1 tbsp vegetable oil
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
  • Crushed peanuts or sesame seeds, for garnish (optional)

Instructions

  1. Cook the rice noodles according to package instructions until al dente. Drain and rinse with cold water. Set aside.
  2. In a bowl, whisk together peanut butter, soy sauce, lime juice, and chili paste until smooth. Add warm water to adjust consistency if needed.
  3. In a skillet, heat oil over medium heat and sauté carrots and bell peppers until tender.
  4. Add the cooked noodles and peanut sauce to the skillet, tossing gently to coat.
  5. Serve topped with fresh cilantro, lime wedges, and crushed peanuts or sesame seeds if desired.
