- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce (or tamari for gluten-free)
- 2 tbsp freshly squeezed lime juice
- 1–2 tbsp chili paste (adjust to heat preference)
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 1 cup snap peas
- 1 tbsp vegetable oil
- Fresh cilantro, for garnish
- Lime wedges, for serving
- Crushed peanuts or sesame seeds, for garnish (optional)
Instructions
- Cook the rice noodles according to package instructions until al dente. Drain and rinse with cold water. Set aside.
- In a bowl, whisk together peanut butter, soy sauce, lime juice, and chili paste until smooth. Add warm water to adjust consistency if needed.
- In a skillet, heat oil over medium heat and sauté carrots and bell peppers until tender.
- Add the cooked noodles and peanut sauce to the skillet, tossing gently to coat.
- Serve topped with fresh cilantro, lime wedges, and crushed peanuts or sesame seeds if desired.
Notes
For added texture, consider including sautéed garlic mushrooms or other vegetables you prefer.
