  • 1 cup White Vinegar or Apple Cider Vinegar

Instructions

  1. Wash and peel the carrots. Cut them into sticks or rounds according to preference.
  2. In a saucepan, combine water, vinegar, and honey. Stir in red pepper flakes and bring to a boil.
  3. Remove from heat, add minced garlic and herbs, then let the mixture sit for a few minutes.
  4. Pack the carrot sticks tightly in a sterilized jar. Pour the brine over the carrots until fully submerged.
  5. Seal the jar and let it cool before refrigerating. Best enjoyed after a day or two.
