- Fresh Carrots
- 1 cup Honey
- 1 cup White Vinegar or Apple Cider Vinegar
- 1 cup Water
- Red Pepper Flakes to taste
- Fresh Garlic (optional)
- Fresh Herbs like Dill or Thyme (optional)
Instructions
- Wash and peel the carrots. Cut them into sticks or rounds according to preference.
- In a saucepan, combine water, vinegar, and honey. Stir in red pepper flakes and bring to a boil.
- Remove from heat, add minced garlic and herbs, then let the mixture sit for a few minutes.
- Pack the carrot sticks tightly in a sterilized jar. Pour the brine over the carrots until fully submerged.
- Seal the jar and let it cool before refrigerating. Best enjoyed after a day or two.

The longer they sit, the better they taste. Ensure the jars are properly sterilized.
