Spicy Grilled Mango Chicken

Description

A vibrant dish combining marinated chicken with sweet grilled mango, perfect for summer grilling.


Ingredients

  • Boneless chicken (breast or thighs)
  • 2 ripe mangoes, sliced
  • 2 tablespoons olive oil
  • 3 cloves fresh garlic, minced
  • Juice of 1 lime
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt to taste
  • Fresh cilantro, for garnish

Instructions

  1. Combine olive oil, minced garlic, lime juice, cumin, paprika, cayenne pepper, and salt in a large bowl. Add chicken and toss to coat. Marinate for at least 30 minutes or overnight in the refrigerator.
  2. Slice mangoes into thick wedges and set aside.
  3. Preheat the grill to medium-high heat and brush the grates with oil to prevent sticking.
  4. Place marinated chicken on the grill and cook for 6–8 minutes per side until the internal temperature reaches 165°F.
  5. Add mango wedges to the grill in the last few minutes, cooking for 2-3 minutes on each side until grill marks form.
  6. Remove chicken and mango from the grill, let chicken rest for a few minutes, then slice. Serve with grilled mango.

Notes

Great served with colorful salad or in tacos. Consider using chicken legs or firm tofu as substitutes.
