A vibrant dish combining marinated chicken with sweet grilled mango, perfect for summer grilling.
Ingredients

- Boneless chicken (breast or thighs)
- 2 ripe mangoes, sliced
- 2 tablespoons olive oil
- 3 cloves fresh garlic, minced
- Juice of 1 lime
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt to taste
- Fresh cilantro, for garnish
Instructions
- Combine olive oil, minced garlic, lime juice, cumin, paprika, cayenne pepper, and salt in a large bowl. Add chicken and toss to coat. Marinate for at least 30 minutes or overnight in the refrigerator.
- Slice mangoes into thick wedges and set aside.
- Preheat the grill to medium-high heat and brush the grates with oil to prevent sticking.
- Place marinated chicken on the grill and cook for 6–8 minutes per side until the internal temperature reaches 165°F.
- Add mango wedges to the grill in the last few minutes, cooking for 2-3 minutes on each side until grill marks form.
- Remove chicken and mango from the grill, let chicken rest for a few minutes, then slice. Serve with grilled mango.
Notes
Great served with colorful salad or in tacos. Consider using chicken legs or firm tofu as substitutes.
