Instructions

  1. Dice the sausage into bite-sized pieces, and chop the potatoes, onions, bell peppers, and celery.
  2. In a large pot over medium heat, cook the sausage until browned. Remove and set aside, retaining some drippings in the pot.
  3. Add onions, bell peppers, and celery, sautéing until softened. Stir in garlic for about a minute until fragrant.
  4. Return the sausage to the pot, add diced potatoes, and pour in the broth. Season with paprika, cayenne, thyme, and black pepper. Bring to a gentle boil.
  5. Reduce heat and let simmer for 20-25 minutes, until potatoes are fork-tender. Stir occasionally and adjust broth as necessary.
  6. Stir in cream or milk, allowing it to meld into the soup for a few more minutes.
  7. Ladle into bowls, garnish with fresh parsley if desired, and serve with crusty bread or salad.

Notes

For a smokier flavor, try andouille sausage. You can substitute potatoes with cauliflower or sweet potatoes for a twist.
