- 4 medium Yukon Gold potatoes, diced
- 1 onion, chopped

- 1/2 teaspoon cayenne pepper
- 1 teaspoon dried thyme

Instructions
- Dice the sausage into bite-sized pieces, and chop the potatoes, onions, bell peppers, and celery.
- In a large pot over medium heat, cook the sausage until browned. Remove and set aside, retaining some drippings in the pot.
- Add onions, bell peppers, and celery, sautéing until softened. Stir in garlic for about a minute until fragrant.
- Return the sausage to the pot, add diced potatoes, and pour in the broth. Season with paprika, cayenne, thyme, and black pepper. Bring to a gentle boil.
- Reduce heat and let simmer for 20-25 minutes, until potatoes are fork-tender. Stir occasionally and adjust broth as necessary.
- Stir in cream or milk, allowing it to meld into the soup for a few more minutes.
- Ladle into bowls, garnish with fresh parsley if desired, and serve with crusty bread or salad.
Notes
For a smokier flavor, try andouille sausage. You can substitute potatoes with cauliflower or sweet potatoes for a twist.
