Description
Moist and spiced gingerbread brownies topped with creamy frosting, perfect for cozy gatherings.
Ingredients
Scale
- 1 cup unsalted butter
- 2 cups brown sugar
- 1 cup molasses
- 4 large eggs
- 2 cups all-purpose flour
- 2 tsp baking powder
- 2 tsp ground ginger
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 8 oz cream cheese
- 4 cups powdered sugar
- 1 tsp vanilla extract
- 1/4 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13 inch baking dish or line it with parchment paper.
- In a medium saucepan over low heat, melt the unsalted butter. Stir in the brown sugar and molasses until well combined, then remove from heat.
- Allow the mixture to cool slightly, then whisk in the eggs one at a time until smooth.
- In a separate bowl, whisk together the flour, baking powder, and spices. Fold into the wet mixture, ensuring not to overmix.
- Pour the batter into your prepared dish and smooth it out. Bake for 25-30 minutes or until a toothpick comes out with moist crumbs.
- Let the brownies cool in the pan on a wire rack before frosting.
- For the frosting, mix cream cheese until smooth. Gradually beat in powdered sugar, vanilla extract, and heavy cream until desired texture is reached. Spread generously over the cooled brownies.
- Cut into squares and serve, garnished with nuts or cocoa powder if desired.
Notes
For a dairy-free option, replace unsalted butter with coconut oil. For a lighter frosting, whipped cream can substitute for cream cheese.
