Delightful golden-brown samosas filled with spiced lamb, served with vibrant mango chutney.

- 1 lb Ground Lamb
- 1 package Samosa Pastry (store-bought or homemade)
- 1 Onion, finely chopped
- 2 cloves Garlic, minced
- 1 inch Ginger, minced
- 1 tsp Cumin
- 1 tsp Coriander
- 1/2 tsp Turmeric
- 1 tsp Garam Masala
- 1/2 cup Fresh Cilantro or Mint, chopped
- Vegetable Oil, for frying
- Mango Chutney, for serving
Instructions
- Heat a tablespoon of oil in a skillet over medium heat. Add finely chopped onions and sauté until they’re golden brown.
- Add minced garlic and ginger, cooking until fragrant.
- Add the ground lamb and break it apart with a spatula. Season with cumin, coriander, turmeric, garam masala, and salt. Cook until the lamb is browned, about 7-10 minutes. Stir in the chopped herbs and remove from heat. Let it cool.
- If making dough, combine all-purpose flour and salt in a bowl, then mix in enough water until a smooth dough forms. Cover and let it rest for 30 minutes.
- Roll out the dough into small circles. Cut each in half to create two semi-circles. Take one semi-circle and fold it into a cone shape, sealing the edge with a bit of water. Fill it with the lamb mixture, sealing the top to form a triangular shape.
- Heat oil in a deep skillet over medium heat and fry the samosas in batches until golden brown and crispy, about 4-5 minutes each. Remove and drain on paper towels.
- Serve warm with mango chutney on the side for dipping.
Notes
Use hot oil for frying to maintain the crispiness. Ensure to seal the samosas properly to prevent spills.
