A delightful family recipe for crispy samosas filled with spiced lamb and paired with sweet, tangy mango chutney.


Ingredients

  • 1 lb ground lamb
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp garam masala
  • 1 tsp chili powder
  • 2 tbsp fresh cilantro, chopped
  • Samosa pastry (ready-made or homemade)
  • Mango chutney (store-bought or homemade)

Instructions

  1. Heat oil in a skillet over medium heat and sauté the onions until translucent.
  2. Add minced garlic and ginger, cooking until fragrant.
  3. Incorporate the ground lamb and cook until browned.
  4. Stir in cumin, coriander, garam masala, and chili powder. Mix well, then fold in fresh cilantro. Allow to cool.
  5. If making pastry, mix flour with salt and water to form a smooth dough; let it rest for 30 minutes.
  6. Roll dough into circles, cut in half, and shape into cones, filling them with cooled lamb mixture.
  7. Seal edges and either deep-fry until golden brown or bake in a preheated oven at 375°F (190°C) for 25-30 minutes.
  8. Serve warm with mango chutney.

Notes

Keep the dough moist to avoid cracking. Don’t overfill the samosas to prevent bursting during cooking.
