Delicious spiced gluten-free pumpkin bars, perfect for fall gatherings and cozy evenings.


Ingredients

  • 1 cup pumpkin puree
  • 1 cup gluten-free flour blend
  • 1/2 cup brown sugar or maple syrup
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 2 eggs
  • 1/2 cup Greek yogurt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • Optional: 1/2 cup chopped walnuts or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, whisk together the gluten-free flour, baking soda, baking powder, and spices.
  3. In another bowl, combine the pumpkin puree, eggs, sweeteners, and Greek yogurt until smooth.
  4. Gradually add the dry ingredients into the wet mixture, stirring until just combined.
  5. If desired, fold in chopped walnuts or chocolate chips.
  6. Pour the batter into the prepared baking dish and smooth with a spatula.
  7. Bake for 25-30 minutes, checking for doneness with a toothpick.
  8. Once done, let cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
  9. Slice into squares and serve warm with optional powdered sugar or whipped cream.

Notes

For a vegan version, substitute eggs with flax eggs and use coconut oil instead of butter.
