Ingredients

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1 cup fresh strawberries, chopped
- ½ cup champagne or sparkling wine
Instructions
- Preheat your oven to 350°F (175°C) and prepare a square baking dish with parchment paper.
- In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar; press into the baking dish. Bake for 10 minutes.
- Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing gently.
- Fold in strawberries and champagne, pour over crust, and bake for 25-30 minutes.
- Cool at room temperature, then chill in the refrigerator for at least 4 hours or overnight.
- Cut into squares and garnish with fresh strawberries or whipped cream before serving.
