A delightful dessert combining creamy cheesecake with fresh strawberries and bubbly champagne.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • ½ cup champagne or sparkling wine
  • 1 tsp vanilla extract
  • 1 envelope gelatin
  • 2 tbsp cold water
  • 2 cups fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine graham cracker crumbs and melted butter in a mixing bowl until evenly moistened.
  3. Press the mixture into the bottom of a lined baking pan and bake for 10 minutes.
  4. Beat cream cheese and sugar together until smooth and fluffy.
  5. Mix in champagne and vanilla extract until fully incorporated.
  6. Combine gelatin with cold water and let bloom for 5 minutes, then heat until melted and whisk into cheesecake mixture.
  7. Fold in chopped strawberries gently.
  8. Pour the cheesecake filling over the baked crust and smooth the top.
  9. Refrigerate for 4-6 hours, or overnight, to set properly.
  10. Cut into bars and serve chilled, garnishing with fresh strawberries if desired.

Notes

For a stronger champagne flavor, add a little more sparkling wine. Make sure to allow the bars to chill overnight for the best texture.
