A delightful dessert combining creamy cheesecake with fresh strawberries and bubbly champagne.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- ½ cup champagne or sparkling wine
- 1 tsp vanilla extract
- 1 envelope gelatin
- 2 tbsp cold water
- 2 cups fresh strawberries, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- Combine graham cracker crumbs and melted butter in a mixing bowl until evenly moistened.
- Press the mixture into the bottom of a lined baking pan and bake for 10 minutes.
- Beat cream cheese and sugar together until smooth and fluffy.
- Mix in champagne and vanilla extract until fully incorporated.
- Combine gelatin with cold water and let bloom for 5 minutes, then heat until melted and whisk into cheesecake mixture.
- Fold in chopped strawberries gently.
- Pour the cheesecake filling over the baked crust and smooth the top.
- Refrigerate for 4-6 hours, or overnight, to set properly.
- Cut into bars and serve chilled, garnishing with fresh strawberries if desired.
Notes
For a stronger champagne flavor, add a little more sparkling wine. Make sure to allow the bars to chill overnight for the best texture.
