  • 4 ripe heirloom tomatoes (or canned tomatoes)
  • 1 teaspoon smoked paprika
  • 1 pinch saffron
  • 1 cup dry white wine (or lemon juice)
  • 2 cups seafood or vegetable broth
  • Fresh parsley, chopped
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Prep the seafood by rinsing it under cold water and patting it dry.
  2. In a large skillet, heat olive oil over medium heat and sauté onion and garlic until translucent.
  3. Add the tomatoes and allow them to break down into a sauce.
  4. Mix in the smoked paprika and saffron for flavor.
  5. Pour in the white wine and let it simmer for 5 minutes.
  6. Add the broth and bring it to a gentle boil, then reduce to a simmer.
  7. Gently introduce the seafood, cooking until shrimp are pink and mussels open, about 5-7 minutes.
  8. Finish with fresh parsley and season with salt and pepper to taste.
  9. Serve the Zarzuela in bowls, alongside crusty bread or saffron-infused rice.
