- 2 tablespoons extra virgin olive oil
- 4 cloves fresh garlic, minced
- 1 medium onion, finely chopped
- 4 ripe heirloom tomatoes (or canned tomatoes)
- 1 teaspoon smoked paprika
- 1 pinch saffron
- 1 cup dry white wine (or lemon juice)
- 2 cups seafood or vegetable broth
- Fresh parsley, chopped
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Prep the seafood by rinsing it under cold water and patting it dry.
- In a large skillet, heat olive oil over medium heat and sauté onion and garlic until translucent.
- Add the tomatoes and allow them to break down into a sauce.
- Mix in the smoked paprika and saffron for flavor.
- Pour in the white wine and let it simmer for 5 minutes.
- Add the broth and bring it to a gentle boil, then reduce to a simmer.
- Gently introduce the seafood, cooking until shrimp are pink and mussels open, about 5-7 minutes.
- Finish with fresh parsley and season with salt and pepper to taste.
- Serve the Zarzuela in bowls, alongside crusty bread or saffron-infused rice.
Notes
Avoid overcooking the seafood; it should be just opaque. Adjust spices to taste as needed. Consider using frozen seafood if fresh isn’t available.
