- Pour in the broth, covering the potatoes and bring to a gentle boil.
- Season with smoked paprika, salt, and pepper; lower heat and simmer for 20-25 minutes until potatoes are tender.
- Stir in fresh herbs and let steep before serving.
- Adjust the consistency by mashing some potatoes or using an immersion blender, if desired.
