- 8 oz fresh Spanish chorizo, sliced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp ground cumin
- 2 bay leaves
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, cooking until softened (about 4–5 minutes).
- Add sliced chorizo and cook until crispy (around 6–8 minutes).
- Stir in chickpeas, coating them in the oils for about 2 minutes.
- Add diced tomatoes and their juices, along with paprika and cumin. Season with salt and pepper.
- Pour in enough water or vegetable broth to cover the stew and add bay leaves. Bring to a simmer and cook for 20–30 minutes.
- Remove bay leaves, stir in chopped parsley, and adjust seasoning.
- Ladle the stew into bowls and serve warm.
Notes
For a vegetarian version, substitute chorizo with a vegan alternative. Serve with crusty bread for dipping.
