- 1 lb chorizo, sliced
- 2 cans chickpeas, rinsed
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups chicken or vegetable broth
- 1 tsp cumin
- 1 tsp smoked paprika
- 2 bay leaves
- Fresh parsley or cilantro for garnish
Instructions
- In a large pot over medium heat, add a splash of olive oil. Cook chorizo for about 5-7 minutes until slightly crispy.
- Add onion and sauté until translucent, about 4 minutes. Stir in minced garlic for a minute.
- Pour in diced tomatoes and chickpeas. Add enough broth to cover the mixture, then season with cumin, paprika, and bay leaves. Stir well.
- Bring to a gentle boil, then reduce heat and let simmer for at least 30-45 minutes.
- Remove bay leaves, adjust seasoning, and sprinkle fresh herbs before serving.
- Ladle into bowls and serve with crusty bread or over rice.
Notes
For a vegetarian version, skip the chorizo and load up on vegetables. This stew freezes beautifully.
