Ingredients

  • 1 lb chorizo, sliced
  • 2 cans chickpeas, rinsed
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 2 bay leaves
  • Fresh parsley or cilantro for garnish

Instructions

  1. In a large pot over medium heat, add a splash of olive oil. Cook chorizo for about 5-7 minutes until slightly crispy.
  2. Add onion and sauté until translucent, about 4 minutes. Stir in minced garlic for a minute.
  3. Pour in diced tomatoes and chickpeas. Add enough broth to cover the mixture, then season with cumin, paprika, and bay leaves. Stir well.
  4. Bring to a gentle boil, then reduce heat and let simmer for at least 30-45 minutes.
  5. Remove bay leaves, adjust seasoning, and sprinkle fresh herbs before serving.
  6. Ladle into bowls and serve with crusty bread or over rice.

Notes

For a vegetarian version, skip the chorizo and load up on vegetables. This stew freezes beautifully.
