- 1 Spaghetti Squash
- 2 cups Mushrooms (cremini or button)
- 3–4 cloves Garlic (minced)
- 1 cup Heavy Cream or dairy alternative
- 1 cup Shredded Mozzarella
- ½ cup Freshly Grated Parmesan
- Fresh Herbs (like thyme or parsley)
- Olive Oil or Butter
- Salt and Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle olive oil, salt, and pepper over the flesh and place cut-side down on a baking sheet.
- Roast the squash for about 40 minutes or until easily pierced with a fork.
- In a skillet, heat olive oil or butter over medium heat. Add sliced mushrooms and minced garlic, sauté until golden brown, about 10 minutes.
- Once the squash is ready, scrape out the strands with a fork and combine them in a large bowl with the sautéed mushrooms and garlic.
- Stir in heavy cream, shredded mozzarella, and grated parmesan. Mix well and season with herbs, salt, and pepper.
- Transfer the mixture to a greased baking dish, topping with additional mozzarella and parmesan.
- Bake for 20-25 minutes or until bubbly and golden.
Notes
For additional flavor, feel free to add fresh herbs or vegetables based on your preference. Allow the gratin to sit for a few minutes after baking for easier serving.
