Description

Ingredients

  • 1 Spaghetti Squash
  • 2 cups Mushrooms (cremini or button)
  • 34 cloves Garlic (minced)
  • 1 cup Heavy Cream or dairy alternative
  • 1 cup Shredded Mozzarella
  • ½ cup Freshly Grated Parmesan
  • Fresh Herbs (like thyme or parsley)
  • Olive Oil or Butter
  • Salt and Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle olive oil, salt, and pepper over the flesh and place cut-side down on a baking sheet.
  3. Roast the squash for about 40 minutes or until easily pierced with a fork.
  4. In a skillet, heat olive oil or butter over medium heat. Add sliced mushrooms and minced garlic, sauté until golden brown, about 10 minutes.
  5. Once the squash is ready, scrape out the strands with a fork and combine them in a large bowl with the sautéed mushrooms and garlic.
  6. Stir in heavy cream, shredded mozzarella, and grated parmesan. Mix well and season with herbs, salt, and pepper.
  7. Transfer the mixture to a greased baking dish, topping with additional mozzarella and parmesan.
  8. Bake for 20-25 minutes or until bubbly and golden.

Notes

For additional flavor, feel free to add fresh herbs or vegetables based on your preference. Allow the gratin to sit for a few minutes after baking for easier serving.
