Ingredients

  • 1 spaghetti squash
  • 1 pound ground meat (beef or turkey)
  • 8 ounces mushrooms (button or cremini)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 28 ounces crushed tomatoes
  • 1/2 cup red wine (optional)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Parmesan cheese for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, and sprinkle with salt and pepper. Place cut-side down on a baking sheet and roast for about 40 minutes or until tender.
  2. While the squash is roasting, heat a tablespoon of olive oil in a large skillet over medium-high heat. Sauté the chopped onions and minced garlic until translucent.
  3. Stir in the ground meat and chopped mushrooms. Cook until browned and crumbly.
  4. Add the tomato paste and crushed tomatoes, followed by a splash of red wine (if using). Stir in your herbs and let the sauce simmer for 20 minutes to allow the flavors to meld.
  5. When the spaghetti squash is ready, flip each half and use a fork to scrape out the flesh, creating beautiful strands.
  6. Place generous portions of spaghetti squash on plates and ladle the Bolognese sauce on top. Finish with fresh basil or a sprinkle of parmesan cheese for an extra touch.

Notes

For a vegetarian version, substitute ground meat with lentils or plant-based alternatives. You can also use fresh tomatoes instead of crushed.
