  • 4 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Wash collard greens thoroughly, stack the leaves and slice them into bite-sized pieces. Set aside.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent (about 5 minutes).
  3. Add minced garlic and sauté for an additional minute until fragrant.
  4. Stir in diced potatoes and cook for 3-4 minutes to absorb flavors.
  5. Gradually add collard greens, stirring until they begin to wilt.
  6. Pour in vegetable broth to cover vegetables, bring to a boil, then reduce heat and simmer for 20-30 minutes until potatoes are tender.
  7. Season with salt and black pepper to taste.
  8. Serve hot, ideally with cornbread.
