  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk (or alternative)
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the sourdough discard, granulated sugar, and brown sugar, mixing until well incorporated.
  3. Add the melted butter, eggs, and milk, whisking until smooth.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  5. Gently fold the dry ingredients into the wet mixture, being careful not to over-mix.
  6. Pour the batter into the prepared loaf pan and smooth the top, optionally sprinkling extra cinnamon and sugar on top.
  7. Bake for 50 to 60 minutes or until a toothpick comes out clean.
  8. Let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes
