- 1 cup sourdough discard
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup milk (or alternative)
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the sourdough discard, granulated sugar, and brown sugar, mixing until well incorporated.
- Add the melted butter, eggs, and milk, whisking until smooth.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- Gently fold the dry ingredients into the wet mixture, being careful not to over-mix.
- Pour the batter into the prepared loaf pan and smooth the top, optionally sprinkling extra cinnamon and sugar on top.
- Bake for 50 to 60 minutes or until a toothpick comes out clean.
- Let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
Feel free to substitute all-purpose flour with whole wheat for a nuttier flavor or replace sugars with honey or maple syrup for natural sweetness. For a vegan option, use a flax egg and plant-based butter.
