- 1 cup ricotta cheese
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 cup ground almonds
- 1 cup all-purpose flour
- 1/4 tsp salt
- Powdered sugar for dusting
Instructions
- In a large mixing bowl, combine ricotta cheese, eggs, melted butter, sugar, and vanilla extract. Whisk until smooth and creamy.
- In another bowl, mix ground almonds, all-purpose flour, and a pinch of salt.
- Gradually fold the dry ingredients into the wet mixture, creating a slightly sticky dough.
- Cover with plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop portions of dough, roll into balls, and flatten slightly before arranging them on the baking sheet.
- Bake for 15-20 minutes, until edges are lightly golden but insides remain soft.
- Dust with powdered sugar after cooling slightly and serve warm.
Notes
For dairy-free, substitute butter with coconut oil and use vegan alternatives for ricotta and eggs.
