Ingredients

  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 cup ground almonds
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • Powdered sugar for dusting

Instructions

  1. In a large mixing bowl, combine ricotta cheese, eggs, melted butter, sugar, and vanilla extract. Whisk until smooth and creamy.
  2. In another bowl, mix ground almonds, all-purpose flour, and a pinch of salt.
  3. Gradually fold the dry ingredients into the wet mixture, creating a slightly sticky dough.
  4. Cover with plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Scoop portions of dough, roll into balls, and flatten slightly before arranging them on the baking sheet.
  7. Bake for 15-20 minutes, until edges are lightly golden but insides remain soft.
  8. Dust with powdered sugar after cooling slightly and serve warm.

Notes

For dairy-free, substitute butter with coconut oil and use vegan alternatives for ricotta and eggs.
