Description

Delightful fluffy pillows made with creamy ricotta and crunchy toasted almonds, perfect for any gathering.

Ingredients

Scale
  • 1 cup fresh ricotta cheese
  • 1/2 cup slivered or chopped almonds, toasted
  • 2 large eggs
  • 1 cup all-purpose flour (or almond flour for gluten-free)
  • Fresh herbs (basil or parsley)
  • 1/4 teaspoon nutmeg or zest of 1 lemon
  • Salt and pepper to taste
  • Olive oil or butter for cooking

Instructions

  1. Toast the almonds in a dry skillet over medium heat until golden and fragrant.
  2. In a large bowl, combine the ricotta, eggs, and any desired seasonings; mix until smooth.
  3. Gradually stir in the flour and toasted almonds until a soft dough forms.
  4. Dust your hands with flour, scoop a small amount of dough, and shape into a pillow.
  5. Heat oil or butter in a skillet over medium heat; add the pillows and cook until golden brown on each side (about 3-4 minutes).
  6. Serve warm, drizzled with olive oil and sprinkled with sea salt.

Notes

For a nut-free option, substitute almonds with finely chopped sunflower seeds. Store leftovers in an airtight container in the refrigerator for up to three days.
