- 2 1/2 cups gluten-free flour blend
- 1 cup warm water (110°F)
- 1 packet active dry yeast
- 2 tablespoons honey or sugar
- 1/4 cup unsalted butter, melted (or coconut oil for dairy-free)
- 1 teaspoon salt
- 2 large eggs (or flax egg for vegan option)
Instructions
- In a large bowl, combine warm water, honey, and yeast. Allow it to sit for 5-10 minutes until frothy.
- In another bowl, whisk together gluten-free flour blend and salt.
- Pour melted butter and eggs into the yeast mixture, mixing well.
- Gradually add dry ingredients, stirring until a soft dough forms.
- Knead the dough for 5-7 minutes until it’s slightly sticky.
- Place dough in a warm space, covered, to rise for about 1 hour until doubled in size.
- Divide dough into 12 equal portions, shape into balls, and place in a greased baking pan.
- Allow rolls to rise for an additional 30 minutes. Preheat oven to 375°F.
- Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
- Remove from the oven, brush with butter, and let cool slightly before serving.
Notes
These rolls can be frozen! Just ensure they cool completely before wrapping tightly.
