- 4 bone-in, skin-on chicken thighs
- 2 tablespoons butter or oil
- 1 sweet yellow onion, chopped
- 3 cloves fresh garlic, minced
- 2 cups chicken broth
- 1 tablespoon fresh thyme or parsley
- 2 bay leaves
- 2 tablespoons flour
- Salt and pepper to taste
- 1 teaspoon paprika
Instructions
- Season chicken thighs with salt, pepper, and paprika. Let rest while preparing the aromatics.
- In a large skillet, heat butter or oil over medium heat. Add chicken thighs, skin-side down, and sear for about 5-7 minutes until golden brown. Flip and cook for another 5 minutes. Remove and set aside.
- Add chopped onion to the same skillet and sauté until translucent, about 3-4 minutes. Stir in minced garlic and cook for another minute.
- Sprinkle in flour and stir, cooking for 1 minute. Gradually whisk in chicken broth, scraping browned bits from the skillet.
- Add herbs and return chicken thighs to the skillet, skin-side up. Reduce heat to low, cover, and let simmer for 30-40 minutes.
- Uncover the skillet for the last 10 minutes of cooking to thicken and allow sauce to caramelize slightly. Adjust seasoning before serving.
Notes
For a lighter version, use boneless chicken thighs. Feel free to experiment with different herbs or vegetables.
