- 4 bone-in, skin-on chicken thighs
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 large onion, chopped
- 2 cups chicken broth
- 1/4 cup flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/4 teaspoon paprika
- 1/4 cup milk (optional)
Instructions
- Season the chicken thighs generously with salt, pepper, and paprika on both sides.
- Melt butter in a skillet over medium-high heat. Sear the chicken thighs, skin-side down, for 5-7 minutes until golden brown. Flip and cook for another 3-4 minutes. Remove from skillet and set aside.
- Add more butter if needed, then sauté onions and garlic until softened and fragrant, about 3-4 minutes.
- Sprinkle flour over the mixture, cooking for an additional minute. Gradually whisk in the chicken broth while stirring to avoid lumps. Add in thyme and additional seasonings.
- Return the chicken to the skillet, skin-side up. Cover and simmer on low heat for 30-40 minutes, or until chicken is cooked through and tender.
- If desired, stir in milk or cream just before serving.
Notes
Ensure not to overcrowd the skillet when searing the chicken for the best results. Taste and adjust seasoning after simmering.
