  • 4 bone-in, skin-on chicken thighs
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 large onion, chopped
  • 2 cups chicken broth
  • 1/4 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/4 teaspoon paprika
  • 1/4 cup milk (optional)

Instructions

  1. Season the chicken thighs generously with salt, pepper, and paprika on both sides.
  2. Melt butter in a skillet over medium-high heat. Sear the chicken thighs, skin-side down, for 5-7 minutes until golden brown. Flip and cook for another 3-4 minutes. Remove from skillet and set aside.
  3. Add more butter if needed, then sauté onions and garlic until softened and fragrant, about 3-4 minutes.
  4. Sprinkle flour over the mixture, cooking for an additional minute. Gradually whisk in the chicken broth while stirring to avoid lumps. Add in thyme and additional seasonings.
  5. Return the chicken to the skillet, skin-side up. Cover and simmer on low heat for 30-40 minutes, or until chicken is cooked through and tender.
  6. If desired, stir in milk or cream just before serving.

Notes

Ensure not to overcrowd the skillet when searing the chicken for the best results. Taste and adjust seasoning after simmering.
