- 8 oz smoked salmon, chopped
- 4 cups waxy potatoes (e.g., Yukon gold or red), diced
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 4 cups vegetable or fish stock
- 1 cup heavy cream
- Fresh dill or chives, chopped
- Juice of 1 lemon
- Salt and pepper, to taste
- 1 tbsp butter
Instructions
- Heat butter in a large pot over medium heat. Add chopped onion and minced garlic; sauté until onion is translucent (about 5 minutes).
- Add diced potatoes and stock, stirring to combine. Bring to a simmer and cook until potatoes are tender (15-20 minutes).
- Stir in heavy cream and allow to simmer gently.
- Gently fold in chopped smoked salmon and warm through for about 5 minutes.
- Season with salt, pepper, and fresh lemon juice. Add chopped herbs.
- Serve warm, garnished with additional herbs and lemon zest, if desired.
Notes
For variations, add vegetables like corn, leeks, or fresh spinach. Take care not to overcook the salmon.
