Ingredients

  • 4 cups waxy potatoes (e.g., Yukon gold or red), diced
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable or fish stock
  • 1 cup heavy cream
  • Fresh dill or chives, chopped
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • 1 tbsp butter

Instructions

  1. Heat butter in a large pot over medium heat. Add chopped onion and minced garlic; sauté until onion is translucent (about 5 minutes).
  2. Add diced potatoes and stock, stirring to combine. Bring to a simmer and cook until potatoes are tender (15-20 minutes).
  3. Stir in heavy cream and allow to simmer gently.
  4. Gently fold in chopped smoked salmon and warm through for about 5 minutes.
  5. Season with salt, pepper, and fresh lemon juice. Add chopped herbs.
  6. Serve warm, garnished with additional herbs and lemon zest, if desired.

Notes

For variations, add vegetables like corn, leeks, or fresh spinach. Take care not to overcook the salmon.
