- 1 cup all-purpose flour (or whole wheat)
- 2 large eggs, separated
- 1 cup whole milk (or low-fat)
- 1 tablespoon baking powder
- 1/4 cup fresh dill, chopped
- 2 tablespoons butter (for cooking)
- 1/2 cup sour cream (or crème fraîche)
- Optional: capers, lemon zest
Instructions
- Prepare the Batter: In a bowl, whisk together flour, baking powder, and a pinch of salt. In another bowl, beat egg yolks with milk until smooth. Stir wet mixture into dry ingredients until just combined, keeping some lumps.
- Whip the Egg Whites: In a clean bowl, beat egg whites until soft peaks form. Gently fold into the batter.
- Cook the Blini: Heat a non-stick skillet over medium heat and melt a little butter. Pour small rounds of batter, cooking until bubbles appear on the surface (2-3 minutes). Flip and cook for 1 minute.
- Assemble the Cake: Layer blini, spread sour cream, sprinkle dill, and top with smoked salmon. Repeat, finishing with a blini on top.
- Garnish and Serve: Decorate with sour cream, dill, and capers or lemon zest before slicing and serving.
Notes
For a non-dairy alternative, use almond milk or coconut yogurt. Feel free to switch salmon for trout or add sautéed spinach.
