Ingredients

  • 1 cup green chiles, chopped (fresh or canned)
  • 4 large flour tortillas
  • 1 cup shredded Monterey Jack or pepper jack cheese
  • 1/2 cup sour cream or Greek yogurt
  • Fresh cilantro, for garnish
  • Juice of 1 lime

Instructions

  1. If using raw chicken, season with salt, pepper, and spices like smoked paprika or cumin, then smoke until tender.
  2. Chop or shred the cooked chicken and sauté the green chiles in a skillet until soft.
  3. Mix the smoked chicken with sautéed chiles, cheese, lime juice, and chopped cilantro.
  4. Lay a tortilla flat, spoon filling into the center, and roll tightly, tucking in the sides.
  5. Toast the burrito seam-side down in a skillet until golden brown on all sides.
  6. Slice in half and serve with lime wedges, sour cream, or salsa.

Notes
