Ingredients

- 2 cups smoked chicken, shredded
- 1 cup green chiles, chopped (fresh or canned)
- 4 large flour tortillas
- 1 cup shredded Monterey Jack or pepper jack cheese
- 1/2 cup sour cream or Greek yogurt
- Fresh cilantro, for garnish
- Juice of 1 lime
Instructions
- If using raw chicken, season with salt, pepper, and spices like smoked paprika or cumin, then smoke until tender.
- Chop or shred the cooked chicken and sauté the green chiles in a skillet until soft.
- Mix the smoked chicken with sautéed chiles, cheese, lime juice, and chopped cilantro.
- Lay a tortilla flat, spoon filling into the center, and roll tightly, tucking in the sides.
- Toast the burrito seam-side down in a skillet until golden brown on all sides.
- Slice in half and serve with lime wedges, sour cream, or salsa.
Notes
Do not overfill the burritos to avoid tearing. Experiment with different fillings like beans or veggies.
