Ingredients

  • 34 lbs chuck roast
  • 4 cloves garlic, minced
  • 2 large onions, chopped
  • 4 large carrots, chopped
  • 1 lb baby potatoes
  • 2 cups beef broth
  • 2 teaspoons fresh thyme
  • 2 teaspoons fresh rosemary
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by chopping the vegetables into large, even pieces.
  2. Heat olive oil in a skillet over medium-high heat. Season the chuck roast with salt and pepper, then sear it on all sides for about 3-4 minutes until a crust forms.
  3. Place the seared roast in the slow cooker and arrange the onions, garlic, carrots, and potatoes around it.
  4. Pour in the beef broth and add the herbs on top.
  5. Cover and cook on low for 8 hours or on high for 4-5 hours.
  6. Once cooked, remove the roast and let it rest for 10-15 minutes before slicing.
  7. Serve with the vegetables and pour rich gravy over the top.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Great for shepherd’s pie or soup!
