Description
A comforting and hearty dish made with tender beef and baby potatoes simmered in garlic butter.
Ingredients

- 2 lbs Beef Chuck Roast (or brisket/shoulder)
- 1.5 lbs Baby Potatoes (or Yukon Gold potatoes)
- 1/2 cup Garlic Butter
- 8 cloves Garlic (whole or minced)
- 1 Onion (chopped, preferably yellow)
- 2 cups Beef Broth (or vegetable broth)
- 1 tsp Fresh Thyme
- 1 tsp Fresh Rosemary
- Salt, to taste
- Black Pepper, to taste
- Fresh Parsley (for garnish)
Instructions
- Chop the beef into large chunks (about two inches) and wash the potatoes.
- Optionally, sear the beef in a skillet with butter for 4-5 minutes.
- Layer chopped onions at the bottom of the slow cooker.
- Add the beef, followed by the potatoes, garlic, and fresh herbs.
- Season with salt and pepper, and scatter garlic butter over the ingredients.
- Pour in the beef broth gently, ensuring layers aren’t disturbed.
- Cook on low for 8-10 hours or high for 4-6 hours.
- About 30 minutes before serving, taste and adjust seasoning; stir in chopped parsley just before serving.
Notes
This dish can be customized with additional vegetables like carrots or green beans. Use fresh herbs for best flavor.
