Description

A comforting and hearty dish made with tender beef and baby potatoes simmered in garlic butter.


Ingredients

  • 2 lbs Beef Chuck Roast (or brisket/shoulder)
  • 1.5 lbs Baby Potatoes (or Yukon Gold potatoes)
  • 1/2 cup Garlic Butter
  • 8 cloves Garlic (whole or minced)
  • 1 Onion (chopped, preferably yellow)
  • 2 cups Beef Broth (or vegetable broth)
  • 1 tsp Fresh Thyme
  • 1 tsp Fresh Rosemary
  • Salt, to taste
  • Black Pepper, to taste
  • Fresh Parsley (for garnish)

Instructions

  1. Chop the beef into large chunks (about two inches) and wash the potatoes.
  2. Optionally, sear the beef in a skillet with butter for 4-5 minutes.
  3. Layer chopped onions at the bottom of the slow cooker.
  4. Add the beef, followed by the potatoes, garlic, and fresh herbs.
  5. Season with salt and pepper, and scatter garlic butter over the ingredients.
  6. Pour in the beef broth gently, ensuring layers aren’t disturbed.
  7. Cook on low for 8-10 hours or high for 4-6 hours.
  8. About 30 minutes before serving, taste and adjust seasoning; stir in chopped parsley just before serving.

Notes

This dish can be customized with additional vegetables like carrots or green beans. Use fresh herbs for best flavor.
