Description

A family favorite that combines tender beef bites and creamy potatoes, slow cooked with aromatic garlic butter for a comforting dish.


Ingredients

  • 2 lbs Beef Chuck, cut into bite-sized pieces
  • 1.5 lbs Yukon Gold or baby potatoes
  • 4 cloves Fresh Garlic, minced
  • 1/2 cup Unsalted Butter
  • 2 cups Beef Broth
  • Salt and Pepper to taste
  • 1 medium Onion, diced
  • 1 tsp Dried Thyme or Rosemary
  • Optional: Carrots or bell peppers

Instructions

  1. Chop the beef into bite-sized pieces and prepare the potatoes.
  2. In a skillet over medium heat, melt butter and sauté the onions until translucent.
  3. Layer the beef, potatoes, sautéed onions, and garlic in the slow cooker.
  4. Pour beef broth over the mixture and add salt, pepper, and herbs.
  5. Cook on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, taste and adjust seasonings as needed.
  7. Serve in bowls, garnished with fresh herbs and alongside crusty bread.

Notes

For a lighter touch, use chicken broth instead of beef broth. Allow the beef to develop a crust before adding it to the slow cooker for better flavor.
