- 2 lbs Beef Chuck, cut into bite-sized pieces
- 1.5 lbs Yukon Gold or baby potatoes
- 4 cloves Fresh Garlic, minced
- 1/2 cup Unsalted Butter
- 2 cups Beef Broth
- Salt and Pepper to taste
- 1 medium Onion, diced
- 1 tsp Dried Thyme or Rosemary
- Optional: Carrots or bell peppers
Instructions
- Chop the beef into bite-sized pieces and prepare the potatoes.
- In a skillet over medium heat, melt butter and sauté the onions until translucent.
- Layer the beef, potatoes, sautéed onions, and garlic in the slow cooker.
- Pour beef broth over the mixture and add salt, pepper, and herbs.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, taste and adjust seasonings as needed.
- Serve in bowls, garnished with fresh herbs and alongside crusty bread.
Notes
For a lighter touch, use chicken broth instead of beef broth. Allow the beef to develop a crust before adding it to the slow cooker for better flavor.
