Description

A comforting and flavorful dish that combines tender beef and creamy potatoes in a rich garlic butter sauce, perfect for family gatherings.


Ingredients

  • 2 lbs beef (Chuck or Round Cut)
  • 2 lbs potatoes (Yukon Gold or Red)
  • 6 cloves garlic (fresh, minced)
  • 1/2 cup butter
  • 2 cups beef broth
  • 1 tsp thyme (fresh or dried)
  • 1 tsp rosemary (fresh or dried)
  • 1/4 cup parsley (fresh, chopped)
  • 1 onion (yellow or sweet, chopped)

Instructions

  1. Chop beef into bite-sized pieces, peel and chop the potatoes, and mince the garlic.
  2. Optionally, brown the beef in a skillet with a tablespoon of butter before adding to the slow cooker.
  3. Layer the beef, onions, garlic, and potatoes in the slow cooker.
  4. Sprinkle herbs over the top, then pour in the beef broth and add remaining butter.
  5. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  6. Stir before serving and adjust seasonings to taste.

Notes

For a lighter version, substitute chicken for beef, or use sweet potatoes instead of regular potatoes.
