- 2 lbs beef (Chuck or Round Cut)
- 2 lbs potatoes (Yukon Gold or Red)
- 6 cloves garlic (fresh, minced)
- 1/2 cup butter
- 2 cups beef broth
- 1 tsp thyme (fresh or dried)
- 1 tsp rosemary (fresh or dried)
- 1/4 cup parsley (fresh, chopped)
- 1 onion (yellow or sweet, chopped)
Instructions
- Chop beef into bite-sized pieces, peel and chop the potatoes, and mince the garlic.
- Optionally, brown the beef in a skillet with a tablespoon of butter before adding to the slow cooker.
- Layer the beef, onions, garlic, and potatoes in the slow cooker.
- Sprinkle herbs over the top, then pour in the beef broth and add remaining butter.
- Cover and cook on low for 6-8 hours or high for 4-5 hours.
- Stir before serving and adjust seasonings to taste.
Notes
For a lighter version, substitute chicken for beef, or use sweet potatoes instead of regular potatoes.
