- 2 pounds beef chuck roast
- 1 can chipotle peppers in adobo sauce
- 1 large onion, sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 teaspoons ground cumin
- 2 teaspoons chili powder
- Juice of 1 fresh lime
- Fresh cilantro, for garnish
Instructions
- Prep your ingredients: Start by cutting your beef chuck roast into large chunks, about two inches in size.
- Sear the beef (optional): If you’ve got the time, searing the beef in a skillet with a bit of oil until browned adds depth of flavor.
- Layer in the slow cooker: Place the seared beef into the slow cooker. Add the sliced onion, minced garlic, chipotle peppers, cumin, chili powder, and beef broth. Mix it all together.
- Cook low and slow: Cover the slow cooker and set it on low for 480 minutes or high for 240-300 minutes.
- Shred the beef: Once cooked, shred the beef with two forks and mix it back into the sauce.
- Assemble your bowl: Serve the beef over a bed of rice or lettuce, and let everyone customize their own bowls with toppings like fresh cilantro, avocado, cheese, and lime.
Notes
For an extra kick, add more chili powder or a splash of hot sauce. Leftovers can be stored in the fridge for 3 to 5 days and freeze well for future meals.
