Ingredients

  • 1 lb ground meat (lamb, beef, or turkey)
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced (optional)
  • 1 tsp fresh thyme
  • 1 tsp fresh rosemary
  • Salt and pepper, to taste
  • 1 tbsp Worcestershire sauce
  • 2 cups mashed potatoes (homemade or store-bought)
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup mascarpone cheese (optional)

Instructions

  1. Brown the ground meat in a skillet over medium heat until browned.
  2. Add onions, garlic, and mushrooms; cook until onions are translucent.
  3. Season with thyme, rosemary, salt, and pepper.
  4. Transfer the mixture to a slow cooker and stir in Worcestershire sauce.
  5. Layer the mashed potatoes over the meat mixture.
  6. Set the slow cooker to low and cook for 6-8 hours or on high for 4 hours.
  7. About 30 minutes before serving, sprinkle the cheese over the top and cover to let it melt.
  8. Allow to cool slightly before serving and enjoy!

Notes

For a lighter version, swap ground meat for lentils or chickpeas. For dairy-free, use cashew cream or nutritional yeast.
