- 1 lb ground beef
- 1 cup carrots, diced
- 1 cup peas
- 1 onion, diced
- 3 cups russet potatoes, peeled and cubed
- 1 cup cheddar cheese, shredded
- 1 cup beef broth
- 1 teaspoon thyme
- 1 teaspoon garlic, minced
- 1 tablespoon butter
- 1/2 cup milk
- Salt to taste
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat, then stir in onions, carrots, and garlic. Cook until vegetables soften, about 5 minutes.
- Sprinkle herbs over the mixture, add broth and stir until combined. Transfer to slow cooker.
- Cook on low for 6 to 8 hours.
- Prepare mashed potatoes by boiling peeled and cubed potatoes until tender. Drain and mash with butter, milk, salt, and half of the cheese until creamy.
- Once the meat mixture is ready, spread mashed potatoes over the top and sprinkle remaining cheese.
- Cover and let meld for 30 minutes before serving.

Layer your cheese at the end to melt beautifully and avoid lifting the lid too often for steady cooking.
