Ingredients

  • 1 lb ground beef
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 onion, diced
  • 3 cups russet potatoes, peeled and cubed
  • 1 cup cheddar cheese, shredded
  • 1 cup beef broth
  • 1 teaspoon thyme
  • 1 teaspoon garlic, minced
  • 1 tablespoon butter
  • 1/2 cup milk
  • Salt to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain excess fat, then stir in onions, carrots, and garlic. Cook until vegetables soften, about 5 minutes.
  2. Sprinkle herbs over the mixture, add broth and stir until combined. Transfer to slow cooker.
  3. Cook on low for 6 to 8 hours.
  4. Prepare mashed potatoes by boiling peeled and cubed potatoes until tender. Drain and mash with butter, milk, salt, and half of the cheese until creamy.
  5. Once the meat mixture is ready, spread mashed potatoes over the top and sprinkle remaining cheese.
  6. Cover and let meld for 30 minutes before serving.
