Description

A comforting and hearty Slow Cooker Cheesy Shepherd’s Pie featuring ground meat, sautéed vegetables, and creamy mashed potatoes topped with gooey cheddar cheese.


Ingredients

  • 1 lb ground beef (or lamb)
  • 1 onion, chopped
  • 2 carrots, chopped
  • 1 cup peas
  • 1 cup corn
  • 2 cloves garlic, minced
  • 1 cup beef or vegetable broth
  • 1 cup sharp cheddar cheese, shredded
  • 2 cups mashed potatoes
  • 1 tsp rosemary
  • 1 tsp thyme
  • Salt and pepper, to taste

Instructions

  1. Prepare the Vegetables: Chop onions, carrots, and any other chosen veggies. Sauté in a skillet until softened.
  2. Brown the Meat: In the same skillet, brown ground meat with garlic, seasonings, and salt and pepper.
  3. Combine in Slow Cooker: Transfer meat and sautéed veggies to the slow cooker. Add broth and stir well.
  4. Add Cheddar: Stir in half the cheese into the mixture, leaving the rest for the top.
  5. Prepare Mashed Potatoes: Boil potatoes until tender and mash with butter, salt, and pepper.
  6. Top and Cook: Spread mashed potatoes over filling and sprinkle remaining cheese on top. Cook on low for 6-8 hours or high for 3-4 hours.
  7. Final Touch: Let it cool slightly before serving.

Notes

For a healthier version, use lean meat or add more vegetables. This dish can easily be customized for vegetarian or dairy-free diets.
