A comforting and hearty Slow Cooker Cheesy Shepherd’s Pie featuring ground meat, sautéed vegetables, and creamy mashed potatoes topped with gooey cheddar cheese.

- 1 lb ground beef (or lamb)
- 1 onion, chopped
- 2 carrots, chopped
- 1 cup peas
- 1 cup corn
- 2 cloves garlic, minced
- 1 cup beef or vegetable broth
- 1 cup sharp cheddar cheese, shredded
- 2 cups mashed potatoes
- 1 tsp rosemary
- 1 tsp thyme
- Salt and pepper, to taste
Instructions
- Prepare the Vegetables: Chop onions, carrots, and any other chosen veggies. Sauté in a skillet until softened.
- Brown the Meat: In the same skillet, brown ground meat with garlic, seasonings, and salt and pepper.
- Combine in Slow Cooker: Transfer meat and sautéed veggies to the slow cooker. Add broth and stir well.
- Add Cheddar: Stir in half the cheese into the mixture, leaving the rest for the top.
- Prepare Mashed Potatoes: Boil potatoes until tender and mash with butter, salt, and pepper.
- Top and Cook: Spread mashed potatoes over filling and sprinkle remaining cheese on top. Cook on low for 6-8 hours or high for 3-4 hours.
- Final Touch: Let it cool slightly before serving.
Notes
For a healthier version, use lean meat or add more vegetables. This dish can easily be customized for vegetarian or dairy-free diets.
