Instructions

  1. In a large mixing bowl, cream together the softened unsalted butter and sugar until light and fluffy.
  2. Mix in the egg and vanilla extract until well combined, then gradually add flour and salt until the dough comes together.
  3. Roll the dough into a log, about 2 inches in diameter, wrap it in plastic wrap, and refrigerate for at least 2 hours.
  4. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  5. Once chilled, unwrap the dough and slice cookies about 1/4-inch thick with a sharp knife, placing them on the prepared baking sheet.
  6. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  7. Let cool on the baking sheet for a few minutes before transferring to wire racks, then decorate if desired.
