Ingredients

  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 1/2 cups rolled oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon (optional)
  • 1/2 tsp vanilla (optional)
  • 1/4 cup nuts or dried fruits (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a muffin tin by greasing it or lining it with paper liners.
  2. Combine the cottage cheese, eggs, and honey or maple syrup in a mixing bowl. Stir until well blended.
  3. Mix the rolled oats, baking powder, and baking soda in another bowl.
  4. Fold the dry ingredients into the wet mixture, stirring gently until just combined.
  5. Fill the muffin cups about ¾ full with the batter. Add sprinkle of oats or seeds on top if desired.
  6. Bake for about 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow them to cool for a few minutes in the pan before transferring to a wire rack.

Notes

Avoid overmixing the batter to ensure light, fluffy muffins. Store in an airtight container for up to three days.
