- 1 cup cottage cheese
- 2 eggs
- 1/4 cup honey or maple syrup
- 1 1/2 cups rolled oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon (optional)
- 1/2 tsp vanilla (optional)
- 1/4 cup nuts or dried fruits (optional)
Instructions
- Preheat your oven to 350°F (175°C). Prepare a muffin tin by greasing it or lining it with paper liners.
- Combine the cottage cheese, eggs, and honey or maple syrup in a mixing bowl. Stir until well blended.
- Mix the rolled oats, baking powder, and baking soda in another bowl.
- Fold the dry ingredients into the wet mixture, stirring gently until just combined.
- Fill the muffin cups about ¾ full with the batter. Add sprinkle of oats or seeds on top if desired.
- Bake for about 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow them to cool for a few minutes in the pan before transferring to a wire rack.
Notes
Avoid overmixing the batter to ensure light, fluffy muffins. Store in an airtight container for up to three days.
