  • 1 pound shrimp, peeled and deveined
  • 4 flour or corn tortillas
  • 1 cup shredded Monterey Jack or cheddar cheese
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving
  • 1 tablespoon olive oil

Instructions

  1. In a skillet, heat olive oil over medium heat. Sauté onions and bell peppers for 3–5 minutes until softened.
  2. Add shrimp, garlic, cumin, chili powder, salt, and pepper to the skillet. Cook until shrimp are pink and opaque, about 3–4 minutes.
  3. Spread oil or butter on half of a tortilla. Add the shrimp mixture and sprinkle with cheese. Fold the tortilla over.
  4. Clean the skillet and return it to medium heat. Cook the quesadilla for 2–3 minutes on each side until golden brown and cheese is melted.
  5. Cut into wedges, garnish with cilantro, and serve with a squeeze of lime and a side of sour cream or guacamole.

Avoid overfilling the quesadilla and ensure the skillet is hot to achieve a crispy texture.
