- 1 pound shrimp, peeled and deveined
- 4 flour or corn tortillas
- 1 cup shredded Monterey Jack or cheddar cheese
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
- 1 tablespoon olive oil
Instructions
- In a skillet, heat olive oil over medium heat. Sauté onions and bell peppers for 3–5 minutes until softened.
- Add shrimp, garlic, cumin, chili powder, salt, and pepper to the skillet. Cook until shrimp are pink and opaque, about 3–4 minutes.
- Spread oil or butter on half of a tortilla. Add the shrimp mixture and sprinkle with cheese. Fold the tortilla over.
- Clean the skillet and return it to medium heat. Cook the quesadilla for 2–3 minutes on each side until golden brown and cheese is melted.
- Cut into wedges, garnish with cilantro, and serve with a squeeze of lime and a side of sour cream or guacamole.
Notes
Avoid overfilling the quesadilla and ensure the skillet is hot to achieve a crispy texture.
