Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 4 cloves fresh garlic, minced
  • 2 tablespoons fresh oregano, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 cup panko breadcrumbs
  • 3 tablespoons extra virgin olive oil
  • Juice of 1 lemon
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse and pat dry your shrimp.
  3. In a large skillet, heat olive oil over medium heat, add minced garlic and chopped oregano, and sauté until fragrant.
  4. Add the shrimp to the skillet, cooking until pink and opaque, about 2-3 minutes per side.
  5. Remove from heat and add breadcrumbs, olive oil, and lemon juice; toss to coat.
  6. Transfer to the preheated oven and bake for 8-10 minutes until breadcrumbs are golden.
  7. Garnish with parsley and serve with lemon wedges.

Notes

Avoid overcrowding the skillet to ensure shrimp sear properly. For added crunch, broil for the last minute of cooking.
