- 1 pound large shrimp, peeled and deveined
- 4 cloves fresh garlic, minced
- 2 tablespoons fresh oregano, chopped
- 2 tablespoons fresh parsley, chopped
- 1 cup panko breadcrumbs
- 3 tablespoons extra virgin olive oil
- Juice of 1 lemon
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse and pat dry your shrimp.
- In a large skillet, heat olive oil over medium heat, add minced garlic and chopped oregano, and sauté until fragrant.
- Add the shrimp to the skillet, cooking until pink and opaque, about 2-3 minutes per side.
- Remove from heat and add breadcrumbs, olive oil, and lemon juice; toss to coat.
- Transfer to the preheated oven and bake for 8-10 minutes until breadcrumbs are golden.
- Garnish with parsley and serve with lemon wedges.
Notes
Avoid overcrowding the skillet to ensure shrimp sear properly. For added crunch, broil for the last minute of cooking.
