- 1 lb large shrimp, peeled and deveined
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 4 tortillas (flour or corn)
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp garlic powder
- Fresh cilantro, for garnish
- 1 lime, for squeezing
Instructions
- Rinse and pat dry the shrimp. Marinate in lime juice and spices for 20 minutes if desired.
- Heat olive oil in a skillet over medium-high heat. Add bell peppers and onion, cooking for 4-5 minutes until tender-crisp.
- Push veggies to the side, add shrimp, and cook for 3-5 minutes until pink and opaque.
- Add cumin, chili powder, and garlic powder; toss everything together for 1 additional minute.
- Warm tortillas in a dry skillet for 30 seconds per side.
- Assemble fajitas by piling the shrimp and veggie mixture into tortillas, garnishing with cilantro and lime juice.
- Serve immediately with your favorite toppings.
Notes
For a vegetarian option, substitute shrimp with tofu or chicken and use lettuce wraps instead of tortillas for a low-carb version.
