Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 4 tortillas (flour or corn)
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Fresh cilantro, for garnish
  • 1 lime, for squeezing

Instructions

  1. Rinse and pat dry the shrimp. Marinate in lime juice and spices for 20 minutes if desired.
  2. Heat olive oil in a skillet over medium-high heat. Add bell peppers and onion, cooking for 4-5 minutes until tender-crisp.
  3. Push veggies to the side, add shrimp, and cook for 3-5 minutes until pink and opaque.
  4. Add cumin, chili powder, and garlic powder; toss everything together for 1 additional minute.
  5. Warm tortillas in a dry skillet for 30 seconds per side.
  6. Assemble fajitas by piling the shrimp and veggie mixture into tortillas, garnishing with cilantro and lime juice.
  7. Serve immediately with your favorite toppings.

Notes

For a vegetarian option, substitute shrimp with tofu or chicken and use lettuce wraps instead of tortillas for a low-carb version.
