- 1 lb sausage (andouille or kielbasa)
- 1 cup onions (chopped)
- 1 cup bell peppers (chopped)
- 1 cup celery (chopped)
- 4 cloves garlic (minced)
- 4 cups chicken broth
- 1 can diced tomatoes
- 2 tablespoons Creole seasoning
- 1 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon black pepper
- 1/2 cup flour (for roux)
- 1/2 cup oil (for roux)
Instructions
- Heat equal parts oil and flour in a large pot over medium heat; stir continuously until the roux turns a rich, dark brown (about 20-30 minutes).
- Add the chopped onions, bell peppers, and celery to the roux; sauté for 5-10 minutes until soft.
- Stir in minced garlic, Creole seasoning, thyme, and cayenne; cook for another minute.
- Add diced tomatoes and chicken broth; bring to a gentle simmer.
- Add sausage and simmer for 20 minutes to blend flavors.
- Gently fold in shrimp and cook for 5 minutes until just done.
- Season to taste and serve hot over cooked rice.
Notes
Serve with crusty French bread to soak up the broth. Adjust seasoning throughout cooking for the best flavor.
