Ingredients

- Rice vinegar

Instructions
- Prep the chicken by seasoning it with salt and pepper. Heat a skillet over medium-high heat, add sesame oil, and sauté the chicken until golden brown and cooked through, about 5-7 minutes.
- While the chicken cooks, chop the bell peppers, cucumbers, and carrots into uniform slices.
- If using raw sesame seeds, toast them in a dry pan over medium heat until golden and fragrant.
- In a bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, and sesame oil until smooth. Adjust seasoning as needed.
