Ingredients

  • 1 lb ground chicken
  • 2 tbsp sesame oil
  • 3 tbsp soy sauce (low-sodium)
  • 2 cloves fresh garlic, minced
  • 1 tbsp fresh ginger, minced
  • 3 green onions, chopped
  • 2 cups jasmine or basmati rice
  • Optional vegetables (precooked broccoli or snap peas)

Instructions

  1. In a mixing bowl, combine ground chicken, minced garlic, ginger, soy sauce, and a drizzle of sesame oil. Mix until well combined, then shape into bite-sized meatballs.
  2. In a large skillet over medium heat, add a tablespoon of sesame oil. Once heated, carefully place the meatballs in the skillet, ensuring not to crowd them. Cook for about 6-8 minutes, turning occasionally until they are golden brown and cooked through.
  3. Remove the meatballs from the skillet and drain any excess grease. In the same skillet, add more soy sauce and a splash of water. Stir to combine and let it bubble for a minute before returning the meatballs back to the pan to coat in the sauce.
  4. While the meatballs are cooking, prepare your rice according to package instructions.
  5. Pile the rice into bowls, top with meatballs, sprinkle with chopped green onions, and drizzle with additional sesame oil if desired. Serve immediately.

Notes

Substitutions for ground chicken include ground turkey or tofu. Adjust soy sauce for gluten-free options with tamari.
