Description

Delicious and nutritious energy balls made with dark chocolate, quinoa, and a hint of sea salt, perfect for a sweet and wholesome snack.


Ingredients

  • 1 cup cooked quinoa
  • 1/2 cup nut butter (almond or peanut)
  • 1/4 cup maple syrup or honey
  • 1/2 cup dark chocolate (at least 70% cacao)
  • 1/2 teaspoon sea salt
  • Optional mix-ins: chopped nuts, seeds, or dried fruits

Instructions

  1. Rinse one cup quinoa, combine with two cups of water in a saucepan, bring to a boil. Reduce heat, cover, and simmer for about 15 minutes. Fluff and cool completely.
  2. Melt dark chocolate in a microwave-safe bowl in 30-second increments, stirring until smooth.
  3. In a large bowl, combine cooled quinoa, nut butter, maple syrup or honey, melted chocolate, and sea salt. Stir to combine.
  4. Roll mixture into bite-sized balls with your hands.
  5. Chill on a parchment-lined baking sheet for at least 30 minutes until firm.
  6. Enjoy immediately or store in an airtight container in the fridge or freezer.

Notes

Make sure to properly cool the quinoa before mixing it with the other ingredients for the best texture.
