- 2 large Sweet Potatoes, peeled and cubed
- 1 pound Fresh Green Beans, trimmed
- 3 tablespoons Olive Oil
- 3 cloves Garlic, minced
- 1 teaspoon Fresh Rosemary, chopped
- 1 teaspoon Fresh Thyme, chopped
- Salt, to taste
- Pepper, to taste
- ½ cup Feta Cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the vegetables by peeling and cubing sweet potatoes and trimming the green beans.
- Mix sweet potatoes and green beans in a bowl and drizzle with olive oil, minced garlic, salt, pepper, and herbs.
- Spread the mixture on a baking sheet lined with parchment paper in a single layer.
- Roast for 25-30 minutes, stirring halfway through, until caramelized.
- Add feta cheese in the last 5 minutes of roasting, if desired.
