  • Salt, to taste
  • Pepper, to taste
  • ½ cup Feta Cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the vegetables by peeling and cubing sweet potatoes and trimming the green beans.
  3. Mix sweet potatoes and green beans in a bowl and drizzle with olive oil, minced garlic, salt, pepper, and herbs.
  4. Spread the mixture on a baking sheet lined with parchment paper in a single layer.
