Ingredients

  • 2 Bell Peppers, chopped
  • 4 Tomatoes, chopped

  • 2 tablespoons Olive Oil
  • Fresh Basil, to taste
  • Salt and Pepper, to taste

Instructions

  1. Prep Your Veggies: Wash and chop all vegetables into bite-sized pieces.
  2. Sauté Aromatics: In a large pot, heat olive oil over medium heat, add onions and sauté until translucent. Add garlic and sauté for an additional 30 seconds.
  3. Cook the Vegetables: Add bell peppers, zucchini, and eggplant; sauté until they soften and begin to caramelize.
  4. Add the Tomatoes and Broth: Stir in chopped tomatoes and broth; bring to a simmer and cook until all vegetables are tender.
  5. Incorporate Fresh Herbs: Stir in fresh basil, salt, and pepper right before serving.

Notes

For a thicker soup, use an immersion blender to puree part of the mixture. Feel free to add in fresh spinach or kale towards the end for added nutrition.
