- 2 Zucchini, chopped
- 1 Eggplant, chopped
- 2 Bell Peppers, chopped
- 4 Tomatoes, chopped
- 1 Onion, diced
- 2 cloves Garlic, minced
- 4 cups Vegetable or Chicken Broth
- 2 tablespoons Olive Oil
- Fresh Basil, to taste
- Salt and Pepper, to taste
Instructions
- Prep Your Veggies: Wash and chop all vegetables into bite-sized pieces.
- Sauté Aromatics: In a large pot, heat olive oil over medium heat, add onions and sauté until translucent. Add garlic and sauté for an additional 30 seconds.
- Cook the Vegetables: Add bell peppers, zucchini, and eggplant; sauté until they soften and begin to caramelize.
- Add the Tomatoes and Broth: Stir in chopped tomatoes and broth; bring to a simmer and cook until all vegetables are tender.
- Incorporate Fresh Herbs: Stir in fresh basil, salt, and pepper right before serving.
- Serve and Enjoy: Ladle into bowls and garnish with additional basil, and serve with crusty bread.
Notes
For a thicker soup, use an immersion blender to puree part of the mixture. Feel free to add in fresh spinach or kale towards the end for added nutrition.
