- 1 fresh panettone, cubed
- 1 pound Italian sausage (mild or spicy)
- 1 cup fresh mushrooms (cremini or button), chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh sage, chopped
- 1 tablespoon fresh thyme, chopped
- 2 tablespoons fresh parsley, chopped
- 2–3 cups chicken or vegetable broth
- 2 eggs, beaten
- 2 tablespoons butter
Instructions
- Begin by slicing the panettone into cubes; set them aside to let them dry out slightly.
- In a large skillet, melt the butter over medium heat. Add the Italian sausage, breaking it up, and cook until browned. Stir in onions and garlic, cooking until the onions are translucent. Finally, add the mushrooms, cooking until they’re tender.
- In a large bowl, combine the panettone cubes with the sausage mixture. Add herbs, broth, and beaten eggs. Mix gently until well combined.
- Preheat your oven to 350°F (175°C). Transfer the mixture to a greased baking dish and top with additional butter if desired.
- Cover with foil and bake for 30 minutes. Remove the foil, and bake for an additional 15-20 minutes until the top is golden and crispy.
Notes
For added flavor, consider roasting your cubed panettone before mixing. Use day-old panettone for better texture. It can be prepared a day ahead and stored in the refrigerator before baking.
