- 1 cup sliced cremini or shiitake mushrooms
- 2 cloves fresh garlic, minced
- 1 tablespoon butter or olive oil
- 1/4 cup grated parmesan or crumbled feta cheese
- Fresh thyme, parsley, or chives (to taste)
- Salt and pepper (to taste)
Instructions
- Heat a medium-sized skillet over medium heat. Add the butter or olive oil and allow it to melt.
- Add the minced garlic and sauté for about a minute until aromatic, being careful not to burn it.
- Incorporate the sliced mushrooms and cook until tender and golden, about 5-7 minutes.
- Add the oats, stirring well to coat them in the buttery mixture and toast for a minute.
- Gradually pour in the broth, stirring frequently. Allow to simmer until the oats are creamy, approximately 5-10 minutes.
- Season with salt and pepper. Add herbs and cheese just before serving.
- Serve hot, garnished with extra herbs, cheese, or a fried egg if desired.
