Ingredients

  • 1 cup sliced cremini or shiitake mushrooms
  • 2 cloves fresh garlic, minced

  • 1/4 cup grated parmesan or crumbled feta cheese
  • Fresh thyme, parsley, or chives (to taste)
  • Salt and pepper (to taste)

Instructions

  1. Heat a medium-sized skillet over medium heat. Add the butter or olive oil and allow it to melt.
  2. Add the minced garlic and sauté for about a minute until aromatic, being careful not to burn it.
  3. Incorporate the sliced mushrooms and cook until tender and golden, about 5-7 minutes.
  4. Add the oats, stirring well to coat them in the buttery mixture and toast for a minute.
  5. Gradually pour in the broth, stirring frequently. Allow to simmer until the oats are creamy, approximately 5-10 minutes.
  6. Season with salt and pepper. Add herbs and cheese just before serving.
