- 4 medium sweet potatoes
- 1 lb lean ground turkey
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Cheese for topping (optional)
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 400°F (204°C). Scrub the sweet potatoes clean and pierce them several times with a fork. Bake for 45-60 minutes until tender.
- While the sweet potatoes bake, heat olive oil in a skillet over medium heat. Add the onion and garlic; sauté until translucent.
- Add ground turkey, breaking it apart with a spoon. Season with cumin, paprika, salt, and pepper. Cook until browned and cooked through, stir in bell peppers and cook for another 3-4 minutes.
- Once the sweet potatoes are done, let cool slightly, slice them open, and fluff the insides with a fork. Fill each potato with the turkey mixture.
- Optional: Top with cheese and return to the oven for another 5-10 minutes to melt the cheese. Garnish with fresh herbs before serving.
