- 4 medium to large sweet potatoes
- 1 lb lean ground turkey
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup fresh spinach, chopped
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Cheese (optional, e.g. cheddar, mozzarella, or feta)
Instructions
- Preheat your oven to 400°F (200°C). Wash the sweet potatoes well and prick them with a fork. Place them on a baking sheet and roast for about 45-60 minutes until tender.
- While the sweet potatoes are roasting, heat olive oil in a skillet over medium heat. Add the chopped onions and garlic, sautéing until soft and fragrant.
- Add the ground turkey to the skillet and cook until fully done.
- Once the turkey is cooked, add the diced bell pepper and chopped spinach, seasoning with paprika, cumin, salt, and pepper. Mix well until veggies soften.
- When sweet potatoes are tender, slice them down the middle and fluff the insides with a fork. Fill each potato with the turkey mixture and top with cheese if desired.
- Return the stuffed sweet potatoes to the oven for another 10 minutes to allow the cheese to melt.
- Garnish with fresh herbs before serving warm.
Notes
Feel free to substitute ground turkey with chicken or plant-based crumbles for a vegetarian option. Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
