  • 4 medium to large sweet potatoes
  • 1 lb lean ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup fresh spinach, chopped
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Cheese (optional, e.g. cheddar, mozzarella, or feta)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes well and prick them with a fork. Place them on a baking sheet and roast for about 45-60 minutes until tender.
  2. While the sweet potatoes are roasting, heat olive oil in a skillet over medium heat. Add the chopped onions and garlic, sautéing until soft and fragrant.
  3. Add the ground turkey to the skillet and cook until fully done.
  4. Once the turkey is cooked, add the diced bell pepper and chopped spinach, seasoning with paprika, cumin, salt, and pepper. Mix well until veggies soften.
  5. When sweet potatoes are tender, slice them down the middle and fluff the insides with a fork. Fill each potato with the turkey mixture and top with cheese if desired.
  6. Return the stuffed sweet potatoes to the oven for another 10 minutes to allow the cheese to melt.
  7. Garnish with fresh herbs before serving warm.
