Ingredients

  • 2 medium to large sweet potatoes
  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup cheese (cheddar, mozzarella, or feta)
  • Sour cream or Greek yogurt for serving
  • Avocado and fresh herbs for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork. Bake for 45–60 minutes until tender.
  3. In a skillet, heat olive oil over medium heat. Sauté onions until translucent, about 3-5 minutes. Add minced garlic and cook for another minute.
  4. Stir in ground turkey, cook until browned, about 8–10 minutes, then add spices and mix until combined.
  5. Allow sweet potatoes to cool slightly, then cut in half and scoop out some flesh. Mix with turkey filling.
  6. Stuff each sweet potato half with the turkey mixture, top with cheese if desired, and return to the oven for 10–15 minutes until heated through.
  7. Serve warm with sour cream, avocado, and fresh herbs.
