- 2 medium to large sweet potatoes
- 1 lb lean ground turkey
- 1 tbsp olive oil
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1/2 cup cheese (cheddar, mozzarella, or feta)
- Sour cream or Greek yogurt for serving
- Avocado and fresh herbs for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork. Bake for 45–60 minutes until tender.
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent, about 3-5 minutes. Add minced garlic and cook for another minute.
- Stir in ground turkey, cook until browned, about 8–10 minutes, then add spices and mix until combined.
- Allow sweet potatoes to cool slightly, then cut in half and scoop out some flesh. Mix with turkey filling.
- Stuff each sweet potato half with the turkey mixture, top with cheese if desired, and return to the oven for 10–15 minutes until heated through.
- Serve warm with sour cream, avocado, and fresh herbs.
